N26 seems like a good bet for you... They do require an address to sign up, as do all other banks, but they only ever send you your card—no other junk.
Revolut is another option. Although not a fully fledged bank (rather a prepaid card), it's great especially if you move money between/earn/spend USD, GBP, and EUR.
Both Revolut and N26 have certain fair usage policies, but for most users, between them you'll pay next to no fees. Together with Schwab Bank, they are my two primary ways of spending money abroad, and I've never had to pay a single fee. Exchange rates are also great (except Thai Baht for Revolut at times).
